These Coconut Lime Chicken Skewers are a tropical delight, perfect for grilling season. Juicy chicken marinated in a zesty coconut lime sauce, skewered and grilled to perfection.

- 1 lb (450g) chicken breast, cut into 1-inch cubes
- 1 cup coconut milk
- 1/4 cup lime juice
- 2 tablespoons soy sauce
- 2 tablespoons honey
- 1 teaspoon garlic powder
- 1 teaspoon ginger powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Skewers (wooden or metal)
Instructions
- In a mixing bowl, combine coconut milk, lime juice, soy sauce, honey, garlic powder, ginger powder, salt, and pepper.
- Add the chicken cubes to the marinade and toss to coat. Cover and refrigerate for at least 1 hour, or overnight for best results.
- If using wooden skewers, soak them in water for 30 minutes to prevent burning.
- Preheat the grill to medium-high heat.
- Thread the marinated chicken onto the skewers, leaving a little space between each piece.
- Grill the skewers for 10-15 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
- Serve with extra lime wedges and your favorite dipping sauce.
Notes
- For added flavor, you can include vegetables like bell peppers or onions on the skewers.
- These skewers are great served with a side of rice or a fresh salad.
- You can also bake the skewers in the oven at 400°F (200°C) for 15-20 minutes if grilling is not an option.
