These coconut condensed milk cookies are soft, chewy, and packed with coconut flavor. They are easy to make and perfect for any occasion!


Ingredients

  • 1 cup (240ml) sweetened condensed milk
  • 1/2 cup (115g) unsalted butter, softened
  • 1 cup (100g) shredded coconut, sweetened
  • 2 cups (250g) all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 large egg

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, cream together the softened butter and sweetened condensed milk until well combined.
  3. Add in the egg and vanilla extract, mixing until fully incorporated.
  4. In another bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fold in the shredded coconut until evenly distributed throughout the dough.
  7. Using a cookie scoop or tablespoon, drop dough onto the prepared baking sheet, spacing them about 2 inches apart.
  8. Bake for 12-15 minutes, or until the edges are lightly golden.
  9. Remove from the oven and let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

  • For extra coconut flavor, you can use coconut extract in addition to the vanilla.
  • These cookies can be stored in an airtight container at room temperature for up to a week.
