A classic Cobb Salad loaded with fresh ingredients and a delicious homemade dressing.
Ingredients

- 4 cups romaine lettuce, chopped
- 2 cups cooked chicken breast, diced
- 1 avocado, diced
- 1 cup cherry tomatoes, halved
- 1/2 cup blue cheese, crumbled
- 1/2 cup cooked bacon, crumbled
- 2 hard-boiled eggs, chopped
- 1/4 cup red onion, diced
- 1/4 cup olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon Dijon mustard
- Salt and pepper to taste
Instructions
- In a large bowl, combine the romaine lettuce, chicken, avocado, cherry tomatoes, blue cheese, bacon, hard-boiled eggs, and red onion.
- In a separate small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, salt, and pepper.
- Drizzle the dressing over the salad and toss gently to combine.
- Serve immediately and enjoy!
Notes
- Feel free to customize your Cobb salad by adding other ingredients such as olives, cucumbers, or different types of cheese.
- For a vegetarian version, substitute chicken with chickpeas or additional veggies.
