Ingredients

  • 2 1/2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 tablespoon granulated sugar
  • 1 cup unsalted butter, chilled and diced
  • 6 to 8 tablespoons ice water
  • 6 to 8 apples, peeled, cored, and sliced (such as Granny Smith or Honeycrisp)
  • 3/4 cup granulated sugar
  • 2 tablespoons all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon nutmeg
  • 1 tablespoon lemon juice
  • 1 tablespoon butter, to dot
  • 1 egg yolk
  • 1 tablespoon milk

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a large bowl, mix together the flour, salt, and sugar. Add the diced butter and mix until the mixture resembles coarse crumbs.
  3. Stir in the ice water, a tablespoon at a time, until the mixture comes together. Divide the dough in half, shape into discs, wrap in plastic, and refrigerate for at least 1 hour.
  4. Roll out one disc of dough on a floured surface to fit your pie dish. Place the rolled dough in the dish and fill with sliced apples.
  5. In a separate bowl, mix the sugar, flour, cinnamon, nutmeg, and lemon juice. Sprinkle this mixture over the apples and dot with butter.
  6. Roll out the second disc of dough and place it over the filling. Seal the edges and make slits in the top crust to allow steam to escape.
  7. In a small bowl, beat together the egg yolk and milk. Brush the mixture over the crust.
  8. Bake in the preheated oven for 15 minutes. Reduce the temperature to 350°F (175°C) and continue baking for 35 to 45 minutes, or until the apples are soft and the crust is golden brown.
  9. Cool on a wire rack before serving.
