Ingredients

  • 4 slices of bacon, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 3 cups diced potatoes
  • 2 cups clam juice
  • 1 cup heavy cream
  • 2 cans (6.5 oz each) clams, drained and chopped
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish

Instructions

  1. In a large pot over medium heat, cook the bacon until crispy. Remove and set aside, leaving the drippings in the pot.
  2. Add onion to the pot and sauté until translucent, about 5 minutes. Stir in garlic and cook for an additional 1 minute.
  3. Add the diced potatoes and clam juice. Bring to a boil, then reduce heat and simmer until the potatoes are tender, about 15 minutes.
  4. Stir in the heavy cream and clams. Heat through, but do not boil. Season with salt and pepper to taste.
  5. Serve hot, garnished with crispy bacon and parsley.
