Easy and flavorful chicken tacos made in the crockpot, perfect for your Cinco de Mayo celebration.

- 2 lbs boneless, skinless chicken breasts
- 1 packet taco seasoning
- 1 cup salsa
- 1 can black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 12 small corn tortillas
- Toppings: diced avocado, shredded cheese, sour cream, chopped cilantro, lime wedges
Instructions
- Place the chicken breasts in the crockpot.
- Sprinkle the taco seasoning over the chicken.
- Pour the salsa over the chicken and seasoning.
- Add the black beans and corn on top.
- Cover and cook on low for 6-8 hours or high for 3-4 hours, until the chicken is cooked through.
- Shred the chicken with two forks and stir it into the sauce.
- Serve the chicken mixture in corn tortillas with your favorite toppings.
Notes
- You can add diced bell peppers or onions for extra flavor.
- Serve with a side of Mexican rice or chips and guacamole.
