Description

Ingredients

  • 2 lbs boneless, skinless chicken breasts
  • 1 packet taco seasoning
  • 1 cup salsa
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 12 small corn tortillas
  • Toppings: diced avocado, shredded cheese, sour cream, chopped cilantro, lime wedges

Instructions

  1. Place the chicken breasts in the crockpot.
  2. Sprinkle the taco seasoning over the chicken.
  3. Pour the salsa over the chicken and seasoning.
  4. Add the black beans and corn on top.
  5. Cover and cook on low for 6-8 hours or high for 3-4 hours, until the chicken is cooked through.
  6. Shred the chicken with two forks and stir it into the sauce.
  7. Serve the chicken mixture in corn tortillas with your favorite toppings.
