- 1 1/2 cups granulated sugar
- 1/2 cup unsalted butter, softened
- 1 cup buttermilk
- 3 large eggs
- 1 tablespoon baking powder
- 1 teaspoon vanilla extract

- Zest of 1 lime
- Juice of 1 lime
- Food coloring (green, yellow, and red for decoration)
- Buttercream frosting
- Fresh fruit (for topping, like strawberries and limes)
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract, lime zest, and lime juice.
- In another bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, alternating with the buttermilk. Mix until just combined.
- Divide the batter evenly between the prepared cake pans.
- Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean. Allow the cakes to cool in the pans for 10 minutes before transferring to a wire rack to cool completely.
- Once cooled, frost the top of one cake layer with buttercream frosting, then place the second layer on top and frost the top and sides of the cake.
- Use food coloring to tint additional frosting in green, yellow, and red, and pipe decorations on the cake to create a festive look.
- Top with fresh fruit for added color and flavor. Slice and serve to celebrate Cinco de Mayo!

- Feel free to add a layer of lime curd between the cake layers for extra zing.
