Ingredients

  • 2 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1 cup buttermilk
  • 3 large eggs
  • 1 tablespoon baking powder
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • Zest of 1 lime
  • Juice of 1 lime
  • Food coloring (green, yellow, and red for decoration)
  • Buttercream frosting
  • Fresh fruit (for topping, like strawberries and limes)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract, lime zest, and lime juice.
  4. In another bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, alternating with the buttermilk. Mix until just combined.
  5. Divide the batter evenly between the prepared cake pans.
  6. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean. Allow the cakes to cool in the pans for 10 minutes before transferring to a wire rack to cool completely.
  7. Once cooled, frost the top of one cake layer with buttercream frosting, then place the second layer on top and frost the top and sides of the cake.
  8. Use food coloring to tint additional frosting in green, yellow, and red, and pipe decorations on the cake to create a festive look.
  9. Top with fresh fruit for added color and flavor. Slice and serve to celebrate Cinco de Mayo!

Notes

  • Feel free to add a layer of lime curd between the cake layers for extra zing.
  • For a more authentic Mexican flavor, consider adding cinnamon to the cake batter.
