Ingredients

  • 1 medium zucchini, grated and drained
  • 1 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup chocolate chips
  • 1/2 cup chopped nuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
  2. In a large bowl, mix together the granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract until well combined.
  3. Add the grated zucchini to the mixture and stir until fully incorporated.
  4. In another bowl, whisk together the flour, cocoa powder, baking soda, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Be careful not to overmix.
  6. Fold in the chocolate chips and nuts (if using).
  7. Pour the batter into the prepared loaf pan and spread it evenly.
  8. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  9. Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

  • Make sure to squeeze excess moisture from the grated zucchini for best results.
  • This bread can be stored in an airtight container at room temperature for up to 4 days.
  • You can freeze the bread for up to 3 months; just wrap it tightly in plastic wrap and foil.
