  • 1 pound boneless, skinless chicken thighs, cut into bite-sized pieces
  • 2 tablespoons soy sauce
  • 1 tablespoon vegetable oil
  • 1 tablespoon honey
  • 1 tablespoon lime juice
  • 2 cloves garlic, minced
  • 1 teaspoon ground ginger
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Wooden skewers, soaked in water for 30 minutes before grilling
  • For the Peanut Sauce:
  • 1/2 cup creamy peanut butter
  • 1/4 cup soy sauce
  • 2 tablespoons honey
  • 1 tablespoon lime juice
  • 1 teaspoon sesame oil
  • 12 tablespoons water (to thin, if necessary)
  • Chopped peanuts and cilantro for garnish

Instructions

  1. In a large bowl, combine soy sauce, vegetable oil, honey, lime juice, garlic, ginger, salt, and pepper. Add chicken pieces and toss to coat. Cover and marinate in the refrigerator for at least 30 minutes, or up to 4 hours.
  2. While the chicken is marinating, prepare the peanut sauce. In a medium bowl, whisk together peanut butter, soy sauce, honey, lime juice, and sesame oil. Add water a little at a time until desired consistency is reached.
  3. Preheat the grill to medium-high heat. Thread marinated chicken onto soaked skewers.
  4. Grill chicken skewers for about 5-7 minutes on each side, or until fully cooked and internal temperature reaches 165°F (75°C).
  5. Serve chicken skewers warm with peanut sauce drizzled on top or on the side for dipping. Garnish with chopped peanuts and cilantro if desired.

Notes

  • If using bamboo skewers, soak in water for at least 30 minutes to prevent burning on the grill.
  • Feel free to add vegetables like bell peppers or onions to the skewers for added flavor and color.
