- Salt and pepper to taste
- 2 cups egg noodles
- 1 cup frozen peas
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the onion, carrots, and celery. Cook until the vegetables are softened, about 5 minutes.
- Stir in the garlic and cook for 1 more minute.
- Pour in the chicken broth and bring to a boil.
- Add the shredded chicken, thyme, parsley, salt, and pepper. Reduce heat to a simmer.
- Add the egg noodles and cook according to package instructions, usually about 8-10 minutes.
- Stir in the frozen peas and cook for an additional 2 minutes until heated through.
