A delicious and easy cheesy zucchini bake that combines fresh zucchini with a creamy cheese mixture, baked to perfection.

- 4 medium zucchinis, sliced
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1/2 cup cream cheese, softened
- 1/2 cup sour cream
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup breadcrumbs
- 2 tablespoons olive oil
- Fresh parsley for garnish
Instructions
- Preheat the oven to 375°F (190°C).
- In a large mixing bowl, combine the cream cheese, sour cream, garlic, oregano, salt, and pepper. Mix until smooth.
- Add the sliced zucchini to the bowl and stir until the zucchini is well coated with the cheese mixture.
- Transfer the zucchini mixture to a greased baking dish and spread it out evenly.
- In a small bowl, mix the breadcrumbs with the olive oil and half of the mozzarella cheese. Sprinkle this mixture over the zucchini.
- Top with the remaining mozzarella and Parmesan cheese.
- Bake in the preheated oven for 25-30 minutes, or until the zucchini is tender and the cheese is bubbly and golden brown.
- Remove from the oven and let it cool for a few minutes. Garnish with fresh parsley before serving.
Notes
- Feel free to add other vegetables like bell peppers or mushrooms for extra flavor.
- For a spicier version, add red pepper flakes to the cheese mixture.
