Ingredients

  • 4 medium zucchinis, sliced
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup cream cheese, softened
  • 1/2 cup sour cream
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup breadcrumbs
  • 2 tablespoons olive oil
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large mixing bowl, combine the cream cheese, sour cream, garlic, oregano, salt, and pepper. Mix until smooth.
  3. Add the sliced zucchini to the bowl and stir until the zucchini is well coated with the cheese mixture.
  4. Transfer the zucchini mixture to a greased baking dish and spread it out evenly.
  5. In a small bowl, mix the breadcrumbs with the olive oil and half of the mozzarella cheese. Sprinkle this mixture over the zucchini.
  6. Top with the remaining mozzarella and Parmesan cheese.
  7. Bake in the preheated oven for 25-30 minutes, or until the zucchini is tender and the cheese is bubbly and golden brown.
  8. Remove from the oven and let it cool for a few minutes. Garnish with fresh parsley before serving.

Notes

  • Feel free to add other vegetables like bell peppers or mushrooms for extra flavor.
  • For a spicier version, add red pepper flakes to the cheese mixture.
