  • 1 cup uncooked long-grain white rice
  • 2 cups beef broth
  • 1 cup shredded cheddar cheese
  • 1 can (10.5 ounces) cream of mushroom soup
  • 1 cup diced tomatoes
  • 1 cup diced onion
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1 cup frozen mixed vegetables (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, heat olive oil over medium heat. Add diced onion and cook until softened, about 3-4 minutes.
  3. Add ground beef to the skillet and cook until browned. Drain excess fat.
  4. Stir in the garlic powder, onion powder, salt, and pepper. Mix well.
  5. In a large mixing bowl, combine the cooked beef mixture, uncooked rice, beef broth, cream of mushroom soup, diced tomatoes, and frozen mixed vegetables if using.
  6. Transfer the mixture to a greased 9×13 inch baking dish. Cover with aluminum foil.
  7. Bake in the preheated oven for 30 minutes.
  8. Remove the foil, sprinkle shredded cheddar cheese on top, and bake uncovered for an additional 10-15 minutes, or until the cheese is bubbly and golden.
  9. Remove from the oven and let it sit for a few minutes before serving.

Notes

  • Feel free to add your favorite vegetables to the casserole.
  • For a spicier version, add diced jalapeños or a dash of hot sauce.
