A comforting and hearty cheesy ground beef and rice casserole that is easy to make and perfect for family dinners.

- 1 pound ground beef
- 1 cup uncooked long-grain white rice
- 2 cups beef broth
- 1 cup shredded cheddar cheese
- 1 can (10.5 ounces) cream of mushroom soup
- 1 cup diced tomatoes
- 1 cup diced onion
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 1 tablespoon olive oil
- 1 cup frozen mixed vegetables (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large skillet, heat olive oil over medium heat. Add diced onion and cook until softened, about 3-4 minutes.
- Add ground beef to the skillet and cook until browned. Drain excess fat.
- Stir in the garlic powder, onion powder, salt, and pepper. Mix well.
- In a large mixing bowl, combine the cooked beef mixture, uncooked rice, beef broth, cream of mushroom soup, diced tomatoes, and frozen mixed vegetables if using.
- Transfer the mixture to a greased 9×13 inch baking dish. Cover with aluminum foil.
- Bake in the preheated oven for 30 minutes.
- Remove the foil, sprinkle shredded cheddar cheese on top, and bake uncovered for an additional 10-15 minutes, or until the cheese is bubbly and golden.
- Remove from the oven and let it sit for a few minutes before serving.
Notes
- Feel free to add your favorite vegetables to the casserole.
- For a spicier version, add diced jalapeños or a dash of hot sauce.
- Leftovers can be stored in the refrigerator for up to 3 days.
