- 3 ripe bananas, mashed
- 1/2 cup (100g) granulated sugar
- 1/4 cup (50g) brown sugar, packed
- 1/3 cup (80ml) melted butter
- 1 teaspoon vanilla extract
- 1 large egg, beaten
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- 1/4 teaspoon ground cardamom
- 1/4 teaspoon ground cloves
- 1 1/2 cups (190g) all-purpose flour
- 1/2 cup (90g) chopped walnuts or pecans (optional)
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
- In a mixing bowl, combine the mashed bananas, granulated sugar, brown sugar, melted butter, and vanilla extract. Mix until well combined.
- Add the beaten egg and mix until fully incorporated.
- In a separate bowl, whisk together the baking soda, salt, cinnamon, ginger, cardamom, and cloves.
- Slowly add the dry ingredients to the wet mixture, mixing until just combined. Be careful not to overmix.
- If using, fold in the chopped nuts.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
Notes
- Store any leftovers in an airtight container at room temperature for up to 3 days.
- For extra flavor, consider adding a tablespoon of chai spice mix to the batter.
