Ingredients

  • 3 ripe bananas, mashed
  • 1/2 cup (100g) granulated sugar
  • 1/4 cup (50g) brown sugar, packed
  • 1/3 cup (80ml) melted butter
  • 1 teaspoon vanilla extract
  • 1 large egg, beaten
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground cardamom
  • 1/4 teaspoon ground cloves
  • 1 1/2 cups (190g) all-purpose flour
  • 1/2 cup (90g) chopped walnuts or pecans (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
  2. In a mixing bowl, combine the mashed bananas, granulated sugar, brown sugar, melted butter, and vanilla extract. Mix until well combined.
  3. Add the beaten egg and mix until fully incorporated.
  4. In a separate bowl, whisk together the baking soda, salt, cinnamon, ginger, cardamom, and cloves.
  5. Slowly add the dry ingredients to the wet mixture, mixing until just combined. Be careful not to overmix.
  6. If using, fold in the chopped nuts.
  7. Pour the batter into the prepared loaf pan and smooth the top.
  8. Bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
  9. Allow the bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Notes

  • Store any leftovers in an airtight container at room temperature for up to 3 days.
  • For extra flavor, consider adding a tablespoon of chai spice mix to the batter.
