Ingredients

  • 1 cup vegetable oil
  • 4 large eggs
  • 3 cups grated carrots
  • 1 cup crushed pineapple, drained
  • 1/2 cup chopped walnuts or pecans (optional)
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large mixing bowl, combine the flour, sugar, baking powder, baking soda, cinnamon, and salt.
  3. In another bowl, whisk together the oil, eggs, grated carrots, crushed pineapple, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined. Fold in the nuts if using.
  5. Divide the batter evenly between the prepared cake pans and smooth the tops.
  6. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean. Allow the cakes to cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
  7. For the frosting, beat the softened cream cheese and butter together until smooth and creamy.
  8. Gradually add the powdered sugar and vanilla extract, mixing until well combined. If the frosting is too thick, add a tablespoon of milk to reach desired consistency.
  9. Once the cakes are completely cool, place one layer on a serving plate and spread a layer of cream cheese frosting on top.
  10. Place the second layer on top and frost the top and sides of the cake with the remaining cream cheese frosting.
  11. Decorate with additional chopped nuts if desired. Slice and serve.
