- 6 large eggs
- 1/4 cup milk
- 1 cup shredded cheese (cheddar or your choice)
- 1 cup diced bell peppers
- 1/2 cup diced onions
- 1/2 cup cooked and crumbled sausage or bacon (optional)
- 6 large flour tortillas
- Salt and pepper to taste
- Cooking oil or spray for the pan
Instructions
- In a bowl, whisk together the eggs and milk. Season with salt and pepper.
- In a skillet over medium heat, add a bit of cooking oil or spray. Sauté the diced onions and bell peppers until soft.
- Pour the egg mixture into the skillet with the veggies. Cook, stirring gently until the eggs are fully cooked.
- Remove from heat and stir in the shredded cheese and cooked sausage or bacon if using.
- Spoon the egg mixture onto the center of each tortilla. Wrap the tortillas tightly around the filling.
- If desired, return the burritos to the skillet to crisp up the outside for a minute or two.
- Serve warm and enjoy your camping breakfast!

- Feel free to customize the filling with other ingredients like spinach, mushrooms, or salsa.
