  • 8 oz fettuccine pasta
  • 1 lb shrimp, peeled and deveined
  • 2 tbsp Cajun seasoning
  • 2 tbsp olive oil
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup diced tomatoes
  • 3 cloves garlic, minced
  • 1/4 cup chopped green onions
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Cook the fettuccine pasta according to package instructions; drain and set aside.
  2. In a bowl, toss the shrimp with Cajun seasoning until evenly coated.
  3. In a large skillet, heat olive oil over medium-high heat. Add the shrimp and cook until pink and opaque, about 2-3 minutes per side. Remove from skillet and set aside.
  4. In the same skillet, add minced garlic and sauté for 1 minute until fragrant.
  5. Pour in the heavy cream and bring to a simmer. Stir in the Parmesan cheese and diced tomatoes, and cook until the sauce thickens slightly.
  6. Add the cooked fettuccine and shrimp to the skillet. Toss to combine and season with salt and pepper to taste.
  7. Garnish with chopped green onions and fresh parsley before serving.
