Ingredients

  • 8 oz fettuccine pasta
  • 1 lb boneless, skinless chicken breasts
  • 2 tablespoons Cajun seasoning
  • 2 tablespoons olive oil
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup bell peppers, sliced
  • 1/2 cup onion, diced
  • 3 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook the fettuccine pasta according to package directions. Drain and set aside.
  2. Season the chicken breasts with Cajun seasoning, salt, and pepper.
  3. In a large skillet, heat olive oil over medium-high heat. Add the chicken and cook for 5-7 minutes on each side, until cooked through. Remove from the skillet and slice into strips.
  4. In the same skillet, add the bell peppers, onion, and garlic. Sauté for 3-4 minutes until softened.
  5. Pour in the heavy cream and chicken broth, stirring to combine. Bring to a simmer.
  6. Add the cooked pasta and sliced chicken back into the skillet. Stir to combine and heat through.
  7. Stir in the Parmesan cheese until melted and creamy. Adjust seasoning with salt and pepper if needed.
  8. Garnish with fresh parsley before serving.

Notes

  • Feel free to add more vegetables like spinach or mushrooms to the pasta.
  • Adjust the spiciness by using less Cajun seasoning if desired.
  • This dish can be made ahead of time and reheats well.
