- 8 oz fettuccine pasta
- 1 lb boneless, skinless chicken breasts
- 2 tablespoons Cajun seasoning
- 2 tablespoons olive oil
- 1 cup heavy cream
- 1 cup chicken broth
- 1 cup bell peppers, sliced
- 1/2 cup onion, diced
- 3 cloves garlic, minced
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Cook the fettuccine pasta according to package directions. Drain and set aside.
- Season the chicken breasts with Cajun seasoning, salt, and pepper.
- In a large skillet, heat olive oil over medium-high heat. Add the chicken and cook for 5-7 minutes on each side, until cooked through. Remove from the skillet and slice into strips.
- In the same skillet, add the bell peppers, onion, and garlic. Sauté for 3-4 minutes until softened.
- Pour in the heavy cream and chicken broth, stirring to combine. Bring to a simmer.
- Add the cooked pasta and sliced chicken back into the skillet. Stir to combine and heat through.
- Stir in the Parmesan cheese until melted and creamy. Adjust seasoning with salt and pepper if needed.
- Garnish with fresh parsley before serving.
Notes
- Feel free to add more vegetables like spinach or mushrooms to the pasta.
- Adjust the spiciness by using less Cajun seasoning if desired.
- This dish can be made ahead of time and reheats well.
