Ingredients

  • 1 medium head, chopped cabbage
  • 1, diced onion
  • 1, diced carrot
  • 2 stalks, diced celery
  • 2 cloves, minced garlic
  • 6 cups beef broth
  • 1 can (14.5 oz) diced tomatoes
  • 2 bay leaves

  • 2 tablespoons olive oil
  • to taste optional: herbs (thyme, oregano)

Instructions

  1. In a large pot, heat olive oil over medium heat. Add ground beef and cook until browned. Drain excess fat.
  2. Add onion, carrot, celery, and garlic to the pot. Sauté for about 5 minutes until vegetables are tender.
  3. Stir in chopped cabbage, beef broth, diced tomatoes, bay leaves, salt, and pepper.
  4. Bring to a boil, then reduce heat and simmer for 30-40 minutes until cabbage is tender.
  5. Adjust seasoning with additional salt and pepper if needed. Add herbs if desired.
