- 1 lb ground beef
- 1 medium head, chopped cabbage
- 1, diced onion
- 1, diced carrot
- 2 stalks, diced celery
- 2 cloves, minced garlic
- 6 cups beef broth
- 1 can (14.5 oz) diced tomatoes
- 2 bay leaves
- to taste salt
- to taste black pepper
- 2 tablespoons olive oil
- to taste optional: herbs (thyme, oregano)
Instructions
- In a large pot, heat olive oil over medium heat. Add ground beef and cook until browned. Drain excess fat.
- Add onion, carrot, celery, and garlic to the pot. Sauté for about 5 minutes until vegetables are tender.
- Stir in chopped cabbage, beef broth, diced tomatoes, bay leaves, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 30-40 minutes until cabbage is tender.
- Adjust seasoning with additional salt and pepper if needed. Add herbs if desired.
- Remove bay leaves before serving. Enjoy your hearty cabbage soup!
