Ingredients

  • 1/2 cup (115g) unsalted butter
  • 1 cup (200g) brown sugar, packed
  • 2 large eggs
  • 2 ripe bananas, mashed
  • 1 teaspoon vanilla extract
  • 1 1/2 cups (190g) all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup (50g) walnuts, chopped

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it lightly.
  2. In a small saucepan, melt the butter over medium heat. Continue cooking, stirring frequently, until the butter turns golden brown and develops a nutty aroma. Remove from heat and let it cool slightly.
  3. In a large bowl, combine the brown sugar and eggs. Whisk until smooth.
  4. Add the mashed bananas and vanilla extract to the egg mixture. Stir until well combined.
  5. Slowly pour in the brown butter, mixing until just incorporated.
  6. In another bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Be careful not to overmix.
  7. Fold in the chopped walnuts.
  8. Scoop the batter into the prepared muffin tin, filling each cup about 2/3 full.
  9. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  10. Allow the muffins to cool in the tin for a few minutes before transferring them to a wire rack to cool completely.

Notes

  • For extra flavor, you can add a pinch of cinnamon or nutmeg to the dry ingredients.
