Ingredients

- 4 cups of chicken or vegetable broth
- 1 cup of diced carrots
- 1 cup of diced celery
- 1 cup of chopped onions
- 2 cloves of garlic, minced
- 1 cup of diced tomatoes
- 1 cup of leafy greens (spinach or kale)
- 1 teaspoon of dried thyme
- Salt and pepper to taste
Instructions
- In a large pot, heat the broth over medium heat.
- Add onions, garlic, carrots, and celery. Sauté for 5 minutes.
- Add diced tomatoes and thyme. Stir well.
- Bring the mixture to a boil, then reduce heat to a simmer.
- Add leafy greens and let simmer for another 10 minutes.
- Season with salt and pepper to taste before serving.

- This soup can be made ahead and stored in the refrigerator.
