Ingredients

  • 1 cup of diced carrots
  • 1 cup of diced celery
  • 1 cup of chopped onions
  • 2 cloves of garlic, minced
  • 1 cup of diced tomatoes
  • 1 cup of leafy greens (spinach or kale)
  • 1 teaspoon of dried thyme
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the broth over medium heat.
  2. Add onions, garlic, carrots, and celery. Sauté for 5 minutes.
  3. Add diced tomatoes and thyme. Stir well.
  4. Bring the mixture to a boil, then reduce heat to a simmer.
  5. Add leafy greens and let simmer for another 10 minutes.
