- 2 eggs
- 1 tablespoon olive oil

Instructions
- In a medium saucepan, heat olive oil over medium heat.
- Add the diced tomatoes and cook for about 2 minutes until softened.
- Pour in the vegetable broth and bring to a boil.
- Add the oatmeal, garlic powder, onion powder, black pepper, and salt. Stir to combine.
- Reduce heat to low and let it simmer for 10 minutes, stirring occasionally.
- Stir in the chopped spinach and cook for an additional 2 minutes until wilted.
- In a separate pan, poach or fry the eggs to your liking.
- Serve the soup in bowls topped with a poached egg and fresh herbs if desired.
