Instructions
- In a bowl, whisk together the flour, sugar, baking powder, and salt.
- In another bowl, mix the milk, egg, and melted butter until combined.
- Pour the wet ingredients into the dry ingredients and stir until just combined; don’t overmix.
- Heat a non-stick skillet over medium heat. Pour 1/4 cup of batter for each pancake onto the skillet.
- Cook until bubbles form on the surface, then flip and cook until golden brown, about 2-3 minutes per side.
- Meanwhile, in a separate skillet, cook the bacon until crispy. Drain on paper towels.
- Arrange pancakes on a plate with bacon and fresh fruit. Serve with maple syrup and a hot beverage.
