- 6 large eggs
- 1/4 cup milk
- 1 cup shredded cheese (cheddar or your choice)
- 1 cup cooked sausage or bacon, crumbled
- 1/2 cup diced bell peppers
- 1/2 cup diced onions
- Salt and pepper to taste
- 6 large flour tortillas
- Salsa or hot sauce (optional)
Instructions
- In a large bowl, whisk together the eggs and milk. Season with salt and pepper.
- In a skillet over medium heat, sauté the onions and bell peppers until softened, about 3-4 minutes.
- Add the egg mixture to the skillet and scramble until cooked through. Stir in the cooked sausage or bacon and cheese until melted.
- Warm the tortillas in a dry skillet or microwave until pliable.
- Divide the egg mixture evenly among the tortillas. Roll each tortilla tightly, folding in the sides as you go.
- Wrap each burrito in foil or parchment paper. Let cool completely before freezing.
- To serve, reheat in the microwave or oven until warmed through. Enjoy with salsa or hot sauce if desired.
