  • 6 large flour tortillas
  • Salsa or hot sauce (optional)

Instructions

  1. In a large bowl, whisk together the eggs and milk. Season with salt and pepper.
  2. In a skillet over medium heat, sauté the onions and bell peppers until softened, about 3-4 minutes.
  3. Add the egg mixture to the skillet and scramble until cooked through. Stir in the cooked sausage or bacon and cheese until melted.
  4. Warm the tortillas in a dry skillet or microwave until pliable.
  5. Divide the egg mixture evenly among the tortillas. Roll each tortilla tightly, folding in the sides as you go.
