Deliciously fragrant blueberry lavender scones that are perfect for breakfast or tea time.

- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 tablespoon dried culinary lavender
- 1/2 cup unsalted butter, cold and cubed
- 1 cup fresh blueberries
- 1/2 cup heavy cream
- 1 large egg
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large bowl, whisk together the flour, sugar, baking powder, salt, and dried lavender.
- Add the cold cubed butter to the flour mixture, and using a pastry cutter or your fingers, mix until the mixture resembles coarse crumbs.
- Gently fold in the fresh blueberries.
- In a separate bowl, whisk together the heavy cream, egg, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
- Turn the dough out onto a floured surface and gently pat it into a circle about 1 inch thick.
- Cut the dough into 8 wedges and place them on the prepared baking sheet.
- Bake for 15-20 minutes or until golden brown. Let cool slightly before serving.
Notes
- For a sweeter glaze, mix powdered sugar with a little milk and drizzle over the scones after baking.
- Ensure you use culinary lavender to avoid any harmful effects from non-food grade lavender.
