- 8 oz cream cheese, softened
- 1/4 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 cup fresh blueberries
- 1 tablespoon lemon juice
- 1 egg, beaten (for egg wash)
- 1 tablespoon coarse sugar (for topping)
Instructions
- Preheat your oven to 375°F (190°C).
- Roll out the refrigerated pie crust on a lightly floured surface to a 12-inch circle.
- In a medium bowl, mix the softened cream cheese, granulated sugar, and vanilla extract until smooth.
- Spread the cream cheese mixture evenly over the pie crust, leaving a 2-inch border around the edges.
- In another bowl, toss the fresh blueberries with lemon juice and pour them over the cream cheese layer.
- Fold the edges of the pie crust over the blueberries, pleating as you go to create a rustic edge.
- Brush the crust with the beaten egg and sprinkle coarse sugar over the edges.
- Bake in the preheated oven for 30-35 minutes or until the crust is golden brown and the blueberries are bubbling.
- Allow to cool for 10 minutes before slicing and serving.
Notes
- You can use frozen blueberries if fresh ones are not available; just thaw and drain any excess moisture.
- For added flavor, try adding a pinch of cinnamon to the cream cheese mixture.
