  • 8 oz cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 cup fresh blueberries
  • 1 tablespoon lemon juice
  • 1 egg, beaten (for egg wash)
  • 1 tablespoon coarse sugar (for topping)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Roll out the refrigerated pie crust on a lightly floured surface to a 12-inch circle.
  3. In a medium bowl, mix the softened cream cheese, granulated sugar, and vanilla extract until smooth.
  4. Spread the cream cheese mixture evenly over the pie crust, leaving a 2-inch border around the edges.
  5. In another bowl, toss the fresh blueberries with lemon juice and pour them over the cream cheese layer.
  6. Fold the edges of the pie crust over the blueberries, pleating as you go to create a rustic edge.
  7. Brush the crust with the beaten egg and sprinkle coarse sugar over the edges.
  8. Bake in the preheated oven for 30-35 minutes or until the crust is golden brown and the blueberries are bubbling.
  9. Allow to cool for 10 minutes before slicing and serving.

Notes

  • You can use frozen blueberries if fresh ones are not available; just thaw and drain any excess moisture.
  • For added flavor, try adding a pinch of cinnamon to the cream cheese mixture.
