- 1 1/2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1/4 cup granulated sugar
- 2 (8 oz) packages cream cheese, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup fresh blueberries
- 1 tablespoon lemon juice
Instructions
- Preheat your oven to 325°F (160°C).
- In a medium bowl, mix together graham cracker crumbs, melted butter, and 1/4 cup sugar until well combined.
- Press the mixture firmly into the bottom of a 9×9 inch baking pan to form the crust.
- In a large bowl, beat the softened cream cheese and 1 cup sugar together until smooth.
- Add in the eggs one at a time, mixing well after each addition.
- Stir in the vanilla extract and lemon juice until fully incorporated.
- Gently fold in the blueberries.
- Pour the cream cheese mixture over the crust in the baking pan and spread it evenly.
- Bake for 30-35 minutes, or until the center is set and the edges are lightly golden.
- Remove from the oven and let cool to room temperature, then refrigerate for at least 4 hours before slicing into bars.
Notes
- Top with additional blueberries or a blueberry sauce before serving for added flavor.
- Store leftovers in an airtight container in the refrigerator for up to 5 days.
