- 4 large eggs
- 1 cup milk

- 8 slices of bacon
- 2 cups shredded cheese (cheddar or your choice)
- 6 large tortillas
- 1 avocado, sliced
- Fresh salsa (for serving)
Instructions
- Preheat the Blackstone griddle over medium heat.
- In a bowl, whisk together eggs and milk until well combined.
- In another bowl, mix flour, sugar, baking powder, and salt. Gradually add the dry ingredients to the egg mixture, stirring just until combined. Fold in the melted butter.
- Pour a ladle of pancake batter onto the griddle for each pancake. Cook until bubbles form on the surface, then flip and cook until golden brown. Keep warm.
- In a separate area of the griddle, cook the bacon until crispy. Remove and drain on paper towels.
- In the remaining bacon fat, sauté the diced bell peppers and onions until soft. Remove from the griddle.
- To assemble breakfast burritos, place the sautéed vegetables, crumbled bacon, and shredded cheese on a tortilla. Roll it up and place it on the griddle seam-side down to crisp the outside.
- Serve the pancakes with butter and syrup. Enjoy the burritos with avocado slices and fresh salsa.
