Ingredients

  • 2 lbs beef chuck roast, cut into chunks
  • 1 lb beef shank
  • 4 cups beef broth
  • 3 dried guajillo chilies, stems and seeds removed
  • 2 dried ancho chilies, stems and seeds removed
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 tablespoon ground cumin
  • 1 tablespoon dried oregano
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • 1 tablespoon apple cider vinegar
  • Tortillas (for serving)
  • Chopped cilantro (for garnish)
  • Chopped onions (for garnish)
  • Lime wedges (for serving)

Instructions

  1. In a large pot, combine beef chuck, beef shank, beef broth, guajillo chilies, ancho chilies, onion, garlic, cumin, oregano, black pepper, salt, and apple cider vinegar.
  2. Bring the mixture to a boil, then reduce heat to low and let simmer for 2-3 hours until the meat is tender.
  3. Remove the meat from the pot and shred it with two forks.
  4. Strain the broth through a fine mesh sieve and reserve the liquid.
  5. Heat a skillet over medium heat, dip a tortilla in the reserved broth, and place it in the skillet.
  6. Add shredded meat to one half of the tortilla, sprinkle with cheese if desired, and fold the tortilla over.
  7. Cook for 1-2 minutes on each side until crispy and golden brown.
  8. Serve the tacos hot with reserved broth for dipping, garnished with chopped cilantro, onions, and lime wedges.

Notes

  • For a spicier version, add more dried chilies or a fresh jalapeño.
  • You can also use corn tortillas for a gluten-free option.
