A delightful combination of sweet strawberries and tart rhubarb baked to perfection with a crispy oat topping.

- 4 cups fresh strawberries, hulled and sliced
- 2 cups rhubarb, chopped
- 1 cup granulated sugar
- 2 tablespoons all-purpose flour
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1 cup rolled oats
- 1/2 cup all-purpose flour
- 1/2 cup brown sugar
- 1/2 cup unsalted butter, melted
- 1/4 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine the sliced strawberries, chopped rhubarb, granulated sugar, 2 tablespoons of flour, vanilla extract, and cinnamon. Mix until well combined.
- Transfer the fruit mixture to a greased 9×13 inch baking dish.
- In another bowl, combine the rolled oats, 1/2 cup flour, brown sugar, melted butter, and salt. Stir until crumbly.
- Spread the oat mixture evenly over the fruit mixture in the baking dish.
- Bake for 35-40 minutes, or until the topping is golden brown and the fruit is bubbly.
- Allow to cool slightly before serving. Enjoy warm with ice cream or whipped cream.
Notes
- Serve with a scoop of vanilla ice cream for a delicious treat.
- You can substitute fresh strawberries with frozen, but make sure to drain any excess liquid.
