Description
This moist carrot cake is packed with fresh grated carrots, warm spices, and topped with a rich cream cheese frosting. Perfect for any occasion!

- 2 cups all-purpose flour
- 2 cups granulated sugar
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon salt
- 1 cup vegetable oil
- 4 large eggs
- 4 cups grated carrots
- 1 cup crushed pineapple, drained
- 1/2 cup chopped walnuts (optional)
- 1/2 cup raisins (optional)
- 8 oz cream cheese, softened
- 1/2 cup unsalted butter, softened
- 4 cups powdered sugar
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a large mixing bowl, combine the flour, sugar, baking powder, baking soda, cinnamon, nutmeg, and salt.
- In another bowl, whisk together the oil and eggs until well combined. Add the grated carrots, crushed pineapple, walnuts, and raisins, if using.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
- Divide the batter evenly between the prepared cake pans and smooth the tops.
- Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
- Allow the cakes to cool in the pans for 10 minutes, then turn them out onto wire racks to cool completely.
- In a medium bowl, beat the cream cheese and butter together until smooth. Gradually add the powdered sugar and vanilla extract, mixing until fluffy.
- Once the cakes are completely cool, spread cream cheese frosting between the layers and over the top and sides of the cake.
Notes
- For an extra moist cake, you can add 1/2 cup of applesauce to the batter.
- This cake can be stored in an airtight container in the refrigerator for up to 5 days.
- You can also freeze the cake layers for up to 3 months. Thaw in the refrigerator before frosting.
