- 2 pounds beef stew meat, cut into bite-sized pieces
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup beef broth
- 1 cup red wine (optional, substitute with more beef broth if desired)
- 1 tablespoon Worcestershire sauce
- 1 tablespoon soy sauce
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons cornstarch
- 2 tablespoons water
- Chopped parsley for garnish (optional)
Instructions
- In a large bowl, combine the beef, onion, and garlic.
- Add the beef broth, red wine, Worcestershire sauce, soy sauce, thyme, salt, and pepper. Stir to combine.
- Transfer the mixture to the crock pot and cover.
- Cook on low for 6-8 hours or on high for 3-4 hours, until the beef is tender.
- In a small bowl, mix the cornstarch and water to create a slurry. Stir this into the crock pot during the last 30 minutes of cooking to thicken the sauce.
- Serve over rice or noodles and garnish with chopped parsley if desired.
Notes
- For a richer flavor, sear the beef in a skillet before adding it to the crock pot.
- Feel free to add vegetables such as carrots or potatoes for a one-pot meal.
