- 1 pound ground beef
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- 1 cup shredded cheese (cheddar or Mexican blend)
- 12 small corn tortillas
- Oil for frying
Instructions
- In a large skillet, cook the ground beef over medium heat until browned. Drain excess fat.
- Add the chopped onion and minced garlic to the skillet. Cook until the onion is translucent.
- Stir in the cumin, chili powder, salt, and pepper. Remove from heat and mix in the shredded cheese.
- Heat the tortillas in a dry skillet or microwave until pliable.
- Spoon a small amount of the beef mixture onto each tortilla, then roll them tightly.
- In a deep skillet or frying pan, heat oil over medium-high heat.
- Fry the taquitos in batches until golden brown and crispy, about 2-3 minutes per side.
- Remove from oil and drain on paper towels. Serve hot with salsa or guacamole.
