Ingredients

  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 12 small corn tortillas
  • Oil for frying

Instructions

  1. In a large skillet, cook the ground beef over medium heat until browned. Drain excess fat.
  2. Add the chopped onion and minced garlic to the skillet. Cook until the onion is translucent.
  3. Stir in the cumin, chili powder, salt, and pepper. Remove from heat and mix in the shredded cheese.
  4. Heat the tortillas in a dry skillet or microwave until pliable.
  5. Spoon a small amount of the beef mixture onto each tortilla, then roll them tightly.
  6. In a deep skillet or frying pan, heat oil over medium-high heat.
  7. Fry the taquitos in batches until golden brown and crispy, about 2-3 minutes per side.
