- 1 pound beef sirloin, sliced into thin strips
- 2 tablespoons olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 8 ounces mushrooms, sliced
- 1 cup beef broth
- 1 tablespoon Worcestershire sauce
- 1 teaspoon Dijon mustard
- 1 cup sour cream
- Salt and pepper to taste
- 8 ounces egg noodles, cooked according to package instructions
- Chopped fresh parsley for garnish
Instructions
- In a large skillet, heat the olive oil over medium-high heat. Add the sliced beef and cook until browned on all sides. Remove the beef from the skillet and set aside.
- In the same skillet, add the chopped onion and cook until softened, about 3-4 minutes. Stir in the minced garlic and sliced mushrooms, cooking until the mushrooms are tender.
- Return the beef to the skillet and add the beef broth, Worcestershire sauce, and Dijon mustard. Bring to a simmer and let cook for 5-7 minutes.
- Reduce the heat to low and stir in the sour cream. Cook until heated through but do not boil. Season with salt and pepper to taste.
- Serve the beef stroganoff over the cooked egg noodles and garnish with chopped fresh parsley.

- For added flavor, you can use a combination of beef broth and red wine.
- Feel free to add more vegetables such as bell peppers or peas for extra nutrition.
