  • 1 cup red wine (optional)
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. In a large pot, heat olive oil over medium-high heat. Add the beef stew meat and brown on all sides.
  2. Add chopped onions and minced garlic to the pot, cooking until the onions are translucent.
  3. Stir in the carrots and potatoes, mixing well.
