- 2 pounds beef stew meat, cut into 1-inch cubes
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 carrots, sliced
- 3 potatoes, diced
- 2 cups beef broth
- 1 cup red wine (optional)
- 2 tablespoons tomato paste
- 1 teaspoon dried thyme
- 1 bay leaf
- Salt and pepper to taste
- 2 tablespoons fresh parsley, chopped (for garnish)
Instructions
- In a large pot, heat olive oil over medium-high heat. Add the beef stew meat and brown on all sides.
- Add chopped onions and minced garlic to the pot, cooking until the onions are translucent.
- Stir in the carrots and potatoes, mixing well.
- Pour in the beef broth and red wine, if using. Add the tomato paste, thyme, bay leaf, salt, and pepper.
- Bring the mixture to a boil, then reduce heat and cover. Let it simmer for 1.5 to 2 hours, or until the beef is tender.
- Remove the bay leaf and taste for seasoning, adjusting salt and pepper as needed.
- Serve hot, garnished with fresh parsley.
