Ingredients

- 2 pounds beef chuck, cut into 1-inch cubes
- 1 tablespoon olive oil
- 1 onion, chopped
- 3 garlic cloves, minced
- 4 carrots, sliced
- 3 celery stalks, sliced
- 4 cups beef broth
- 2 cups water
- 1 can (14.5 oz) diced tomatoes
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- 2 cups green beans, trimmed and cut into 1-inch pieces
- 1 cup frozen peas
- 1 tablespoon Worcestershire sauce
- Fresh parsley, for garnish
Instructions
- In a large pot, heat olive oil over medium heat. Add the beef cubes and brown on all sides.
- Add the chopped onion and garlic to the pot, and sauté until the onion is translucent.
- Stir in the carrots and celery, cooking for another 5 minutes.
- Pour in the beef broth and water, then add the diced tomatoes, thyme, rosemary, salt, and pepper. Bring to a boil.
- Reduce heat and let simmer for 1.5 to 2 hours, or until the beef is tender.
- Stir in the green beans and peas, and add Worcestershire sauce. Simmer for an additional 10-15 minutes.
- Taste and adjust seasoning if necessary. Serve hot, garnished with fresh parsley.
Notes
- For extra flavor, you can add a bay leaf while simmering and remove it before serving.
- Feel free to customize the vegetables based on your preference or what you have on hand.
- This soup can be stored in the refrigerator for up to 3 days or frozen for up to 3 months.
