  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 4 carrots, sliced
  • 3 celery stalks, sliced
  • 4 cups beef broth
  • 2 cups water
  • 1 can (14.5 oz) diced tomatoes
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 2 cups green beans, trimmed and cut into 1-inch pieces
  • 1 cup frozen peas
  • 1 tablespoon Worcestershire sauce
  • Fresh parsley, for garnish

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the beef cubes and brown on all sides.
  2. Add the chopped onion and garlic to the pot, and sauté until the onion is translucent.
  3. Stir in the carrots and celery, cooking for another 5 minutes.
  4. Pour in the beef broth and water, then add the diced tomatoes, thyme, rosemary, salt, and pepper. Bring to a boil.
  5. Reduce heat and let simmer for 1.5 to 2 hours, or until the beef is tender.
  6. Stir in the green beans and peas, and add Worcestershire sauce. Simmer for an additional 10-15 minutes.
  7. Taste and adjust seasoning if necessary. Serve hot, garnished with fresh parsley.
