  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 cup fresh parsley, chopped
  • 1/2 cup fresh cilantro, chopped
  • 3 cloves garlic, minced
  • 1/2 teaspoon red pepper flakes
  • 1/4 cup red wine vinegar
  • 1/2 cup olive oil for chimichurri
  • Juice of 1 lemon

Instructions

  1. Preheat your grill to high heat.
  2. Rub the skirt steak with olive oil, salt, and pepper.
  3. Grill the steak for about 3-4 minutes on each side for medium-rare, or until desired doneness.
  4. Remove the steak from the grill and let it rest for 5 minutes before slicing.
