- 1 lb beef skirt steak
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 cup fresh parsley, chopped
- 1/2 cup fresh cilantro, chopped
- 3 cloves garlic, minced
- 1/2 teaspoon red pepper flakes
- 1/4 cup red wine vinegar
- 1/2 cup olive oil for chimichurri
- Juice of 1 lemon
Instructions
- Preheat your grill to high heat.
- Rub the skirt steak with olive oil, salt, and pepper.
- Grill the steak for about 3-4 minutes on each side for medium-rare, or until desired doneness.
- Remove the steak from the grill and let it rest for 5 minutes before slicing.
- Meanwhile, in a bowl, combine parsley, cilantro, garlic, red pepper flakes, red wine vinegar, and lemon juice.
- Slowly whisk in 1/2 cup olive oil until well mixed.
- Slice the steak against the grain and serve with chimichurri sauce drizzled on top.
