Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Season the beef shank with salt and pepper.
  3. Brown the beef shank on all sides, about 5 minutes per side.
  4. Add onion, garlic, carrots, and celery. Sauté for 5 minutes.
  5. Pour in red wine and scrape the bottom of the pot.
  6. Add beef broth, thyme, and bay leaf.
  7. Bring to a boil, then reduce heat to low.
  8. Cover and simmer for 2 to 3 hours until tender.
  9. Remove beef shank and let rest before slicing.
  10. Serve with vegetables and broth.
