Ingredients

  • 2 pounds beef shank, cut into 1.5-inch pieces
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 garlic cloves, minced
  • 1 cup red wine
  • 4 cups beef broth
  • 2 sprigs fresh thyme
  • 2 bay leaves
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. In a large Dutch oven, heat olive oil over medium-high heat. Season beef shanks with salt and pepper.
  3. Sear the beef shanks on all sides until browned, about 3-4 minutes per side. Remove and set aside.
  4. In the same pot, add onion, carrots, celery, and garlic. Sauté until vegetables are softened, about 5-7 minutes.
  5. Pour in red wine and scrape the bottom of the pot to deglaze. Let it simmer for 2-3 minutes.
  6. Return the beef shanks to the pot. Add beef broth, thyme, and bay leaves. Bring to a simmer.
  7. Cover the pot and transfer it to the preheated oven. Braise for 2.5 to 3 hours, or until the meat is fork-tender.
  8. Remove from the oven and let cool slightly. Discard bay leaves and thyme sprigs.
  9. Serve the beef shank with the braising liquid and vegetables.
