- 2 pounds beef shank, cut into 1.5-inch pieces
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 garlic cloves, minced
- 1 cup red wine
- 4 cups beef broth
- 2 sprigs fresh thyme
- 2 bay leaves
- Salt and pepper to taste
Instructions
- Preheat the oven to 325°F (163°C).
- In a large Dutch oven, heat olive oil over medium-high heat. Season beef shanks with salt and pepper.
- Sear the beef shanks on all sides until browned, about 3-4 minutes per side. Remove and set aside.
- In the same pot, add onion, carrots, celery, and garlic. Sauté until vegetables are softened, about 5-7 minutes.
- Pour in red wine and scrape the bottom of the pot to deglaze. Let it simmer for 2-3 minutes.
- Return the beef shanks to the pot. Add beef broth, thyme, and bay leaves. Bring to a simmer.
- Cover the pot and transfer it to the preheated oven. Braise for 2.5 to 3 hours, or until the meat is fork-tender.
- Remove from the oven and let cool slightly. Discard bay leaves and thyme sprigs.
- Serve the beef shank with the braising liquid and vegetables.
