Ingredients

  • 2 cups beef broth

  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • Salt and pepper to taste

Instructions

  1. Season the beef roast with salt and pepper.
  2. Heat olive oil in a skillet over medium-high heat.
  3. Sear the roast on all sides until browned.
  4. Place the chopped vegetables in the crockpot.
  5. Add the seared roast on top of the vegetables.
  6. Pour the beef broth over the roast and vegetables.
  7. Add thyme, rosemary, and garlic.
  8. Cover and cook on low for 8 hours or high for 4 hours.
  9. Check for tenderness before serving.
