Description
A simple and delicious beef roast made in a crockpot.
Ingredients
Scale
- 3–4 pounds beef roast
- 1 tablespoon olive oil
- 2 cups beef broth
- 4 carrots, chopped
- 4 potatoes, chopped
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon thyme
- 1 teaspoon rosemary
- Salt and pepper to taste
Instructions
- Season the beef roast with salt and pepper.
- Heat olive oil in a skillet over medium-high heat.
- Sear the roast on all sides until browned.
- Place the chopped vegetables in the crockpot.
- Add the seared roast on top of the vegetables.
- Pour the beef broth over the roast and vegetables.
- Add thyme, rosemary, and garlic.
- Cover and cook on low for 8 hours or high for 4 hours.
- Check for tenderness before serving.
Notes
- Adjust seasoning according to your taste.
- You can add other vegetables like celery or mushrooms.
- Leftovers can be stored in the refrigerator for up to 3 days.
