A hearty and delicious beef ramen noodle soup with tender beef slices and flavorful broth.

- 2 packs of instant ramen noodles
- 1 lb beef sirloin, thinly sliced
- 4 cups beef broth
- 2 cups water
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 tablespoon ginger, minced
- 2 cloves garlic, minced
- 2 green onions, sliced
- 1 cup mushrooms, sliced
- 2 cups bok choy, chopped
- Soft-boiled eggs for serving (optional)
- Salt and pepper to taste
Instructions
- In a large pot over medium heat, add sesame oil. Once hot, add ginger and garlic, and sauté until fragrant.
- Add the sliced beef and cook until browned. Season with salt and pepper.
- Pour in the beef broth and water. Add soy sauce and bring to a boil.
- Stir in the mushrooms and bok choy, and reduce heat to simmer for about 5 minutes.
- Meanwhile, cook the ramen noodles according to package instructions. Drain and set aside.
- Once the vegetables are tender, add the cooked ramen noodles to the pot. Stir until well combined.
- Serve the soup hot, garnished with sliced green onions and soft-boiled eggs if desired.
Notes
- Feel free to add any additional vegetables you like, such as carrots or bell peppers.
- For extra flavor, you can add chili oil or sriracha for a spicy kick.
