Ingredients

  • 2 packs of instant ramen noodles
  • 1 lb beef sirloin, thinly sliced
  • 4 cups beef broth
  • 2 cups water
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon ginger, minced
  • 2 cloves garlic, minced
  • 2 green onions, sliced
  • 1 cup mushrooms, sliced
  • 2 cups bok choy, chopped
  • Soft-boiled eggs for serving (optional)
  • Salt and pepper to taste

Instructions

  1. In a large pot over medium heat, add sesame oil. Once hot, add ginger and garlic, and sauté until fragrant.
  2. Add the sliced beef and cook until browned. Season with salt and pepper.
  3. Pour in the beef broth and water. Add soy sauce and bring to a boil.
  4. Stir in the mushrooms and bok choy, and reduce heat to simmer for about 5 minutes.
  5. Meanwhile, cook the ramen noodles according to package instructions. Drain and set aside.
  6. Once the vegetables are tender, add the cooked ramen noodles to the pot. Stir until well combined.
  7. Serve the soup hot, garnished with sliced green onions and soft-boiled eggs if desired.

Notes

  • Feel free to add any additional vegetables you like, such as carrots or bell peppers.
  • For extra flavor, you can add chili oil or sriracha for a spicy kick.
