A flavorful and aromatic beef pho recipe that brings the taste of Vietnam right to your kitchen. This traditional noodle soup is rich in flavor and perfect for any occasion.

- 1 pound beef bones (preferably marrow bones)
- 1 pound beef brisket, thinly sliced
- 1 large onion, halved
- 1 piece ginger, about 3 inches, sliced
- 5 star anise pods
- 1 cinnamon stick
- 3 cloves
- 1 tablespoon coriander seeds
- 1 tablespoon fish sauce
- 1 tablespoon salt
- 8 cups water
- 8 ounces rice noodles (bánh phở)
- Fresh herbs (basil, cilantro, mint)
- Lime wedges
- Bean sprouts
- Thinly sliced jalapeños or chili peppers
- Sliced green onions
- Hoisin sauce (optional)
- Sriracha sauce (optional)
Instructions
- In a large pot, add the beef bones and cover with water. Bring to a boil and let it boil for about 10 minutes. This helps to remove impurities. Drain and rinse the bones.
- Return the bones to the pot and add 8 cups of fresh water, the halved onion, sliced ginger, star anise, cinnamon stick, cloves, coriander seeds, fish sauce, and salt.
- Bring the pot to a boil, then reduce the heat to low and let it simmer for at least 3 hours. Skim off any foam or fat that rises to the surface.
- After 3 hours, remove the bones and strain the broth through a fine mesh sieve. Discard the solids and return the broth to the pot. Adjust the seasoning with more fish sauce or salt if needed.
- Prepare the rice noodles according to the package instructions. Drain and set aside.
- To serve, place a portion of the cooked noodles in a bowl, top with slices of beef brisket, and ladle the hot broth over the top. The heat from the broth will cook the beef.
- Garnish with fresh herbs, lime wedges, bean sprouts, sliced jalapeños, and green onions. Serve with hoisin sauce and sriracha on the side.
Notes
- For a richer broth, you can roast the bones and onion in a 400°F (200°C) oven for 30 minutes before boiling.
- Feel free to customize your pho with other toppings like fried shallots or additional herbs.
- This recipe can be made ahead of time; the broth freezes well for future meals.
