Ingredients

  • 8 cups beef broth
  • 4 oz rice noodles
  • 1 onion, sliced

  • 1 cup bok choy, chopped
  • Salt and pepper to taste

Instructions

  1. In a pot, brown the beef shank over medium heat.
  2. Add onion and garlic, sauté until fragrant.
  3. Pour in beef broth, soy sauce, fish sauce, and ginger.
  4. Bring to a boil, then reduce heat and simmer for 1.5 hours.
  5. Remove beef, shred it, and set aside.
  6. Add rice noodles and bok choy to the broth, cook until noodles are tender.
  7. Return shredded beef to the pot and heat through.
  8. Serve hot, garnished with green onions.
