A hearty and flavorful beef noodle soup that warms you up.
Ingredients

- 1 lb beef shank
- 8 cups beef broth
- 4 oz rice noodles
- 1 onion, sliced
- 3 cloves garlic, minced
- 2 tbsp soy sauce
- 1 tbsp fish sauce
- 1 tsp ginger, grated
- 2 green onions, chopped
- 1 cup bok choy, chopped
- Salt and pepper to taste
Instructions
- In a pot, brown the beef shank over medium heat.
- Add onion and garlic, sauté until fragrant.
- Pour in beef broth, soy sauce, fish sauce, and ginger.
- Bring to a boil, then reduce heat and simmer for 1.5 hours.
- Remove beef, shred it, and set aside.
- Add rice noodles and bok choy to the broth, cook until noodles are tender.
- Return shredded beef to the pot and heat through.
- Serve hot, garnished with green onions.
Notes
- Adjust seasoning to your taste.
- For a spicier version, add chili paste.
- Use fresh herbs for garnish.
