Ingredients

  • 2 pounds of lean beef (such as flank steak or sirloin)
  • 1/4 cup soy sauce
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon liquid smoke
  • 1 tablespoon brown sugar
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon black pepper
  • 1 teaspoon red pepper flakes (optional, for heat)
  • 1 teaspoon salt

Instructions

  1. Trim all visible fat from the beef and slice it into thin strips, about 1/8 to 1/4 inch thick.
  2. In a large bowl, combine soy sauce, Worcestershire sauce, liquid smoke, brown sugar, garlic powder, onion powder, black pepper, red pepper flakes, and salt. Mix well.
  3. Add the beef strips to the marinade, ensuring they are well coated. Cover and refrigerate for at least 4 hours, or overnight for best flavor.
  4. After marinating, remove the beef from the marinade and let the excess drip off. Pat the strips dry with paper towels.
  5. Arrange the beef strips in a single layer on the dehydrator trays, making sure they do not overlap.
  6. Set the dehydrator to 155°F (68°C) and dry the beef jerky for 4 to 8 hours, or until it reaches your desired texture. The jerky should be dry but still somewhat pliable.
  7. Once done, let the jerky cool completely before storing it in an airtight container.

Notes

  • For a spicier version, increase the amount of red pepper flakes.
  • Make sure to use lean cuts of beef to prevent spoilage.
  • Store the jerky in a cool, dry place or in the refrigerator for longer shelf life.
