- 2 pounds beef chuck roast, cut into 1-inch cubes
- 4 cups beef broth
- 3 large carrots, sliced
- 3 medium potatoes, diced
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 2 tablespoons tomato paste
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1 tablespoon Worcestershire sauce
- 1 bay leaf
Instructions
- In a large skillet over medium-high heat, heat olive oil.
- Add the beef cubes and sear until browned on all sides, about 5 minutes.
- Transfer the beef to the crockpot.
- Add carrots, potatoes, onion, and garlic to the crockpot.
- In a small bowl, mix together beef broth, tomato paste, Worcestershire sauce, thyme, rosemary, salt, and pepper.
- Pour the broth mixture over the beef and vegetables in the crockpot.
- Add the bay leaf.
- Cover and cook on low for 8 hours or high for 4 hours, until the beef is tender.
- Remove bay leaf before serving.
Notes
- For extra flavor, you can add a splash of red wine to the broth.
- Feel free to add your favorite vegetables like peas or green beans during the last hour of cooking.
