  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 tablespoon Worcestershire sauce
  • 1 bay leaf

Instructions

  1. In a large skillet over medium-high heat, heat olive oil.
  2. Add the beef cubes and sear until browned on all sides, about 5 minutes.
  3. Transfer the beef to the crockpot.
  4. Add carrots, potatoes, onion, and garlic to the crockpot.
  5. In a small bowl, mix together beef broth, tomato paste, Worcestershire sauce, thyme, rosemary, salt, and pepper.
  6. Pour the broth mixture over the beef and vegetables in the crockpot.
  7. Add the bay leaf.
  8. Cover and cook on low for 8 hours or high for 4 hours, until the beef is tender.
  9. Remove bay leaf before serving.
