- 2 pounds ground beef
- 1 large onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 2 cans (15 oz each) kidney beans, drained and rinsed
- 1 can (28 oz) crushed tomatoes
- 2 tablespoons chili powder
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 cup beef broth
- Optional toppings: shredded cheese, sour cream, green onions
Instructions
- In a large pot over medium heat, add the ground beef and cook until browned, breaking it apart with a spoon.
- Add the diced onion, minced garlic, and bell pepper. Cook until the vegetables are softened, about 5-7 minutes.
- Stir in the chili powder, cumin, paprika, salt, and pepper. Cook for an additional 2 minutes to toast the spices.
- Add the crushed tomatoes, kidney beans, and beef broth. Stir to combine.
- Bring the chili to a boil, then reduce the heat to low. Cover and simmer for 30 minutes, stirring occasionally.
- Taste and adjust seasoning if necessary. Serve hot with your choice of toppings.
