Ingredients

  • 1 pound ground beef
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 packet taco seasoning
  • 1 cup refried beans
  • 2 cups cooked rice
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1/2 cup salsa
  • 6 large flour tortillas
  • Sour cream and guacamole for serving (optional)

Instructions

  1. In a large skillet over medium heat, cook the ground beef until browned. Drain any excess fat.
  2. Add the chopped onion and minced garlic to the skillet and sauté until the onion is translucent.
  3. Stir in the taco seasoning and a little water as directed on the seasoning packet. Cook for a few minutes until thickened.
  4. In a separate bowl, mix together the refried beans, cooked rice, and salsa.
  5. To assemble the burritos, lay a tortilla flat and spread a scoop of the beef mixture in the center.
  6. Add a scoop of the rice and bean mixture, and top with shredded cheese.
  7. Fold in the sides of the tortilla, then roll it up from the bottom to form a burrito.
  8. Repeat with the remaining tortillas and fillings.
  9. If desired, grill the burritos in a skillet or on a panini press until golden and crispy.
  10. Serve with sour cream and guacamole.

Notes

  • Feel free to customize with your favorite toppings such as jalapeños, lettuce, or diced tomatoes.
  • For a spicier burrito, add some diced green chilies to the beef mixture.
