Ingredients

  • 2 pounds beef chuck roast, cut into chunks
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 1 cup carrots, sliced
  • 1 cup celery, sliced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper, to taste
  • 8 ounces egg noodles
  • 2 tablespoons cornstarch (optional, for thickening)
  • Chopped parsley, for garnish

Instructions

  1. In a crockpot, add the beef chunks, chopped onion, minced garlic, beef broth, carrots, celery, thyme, rosemary, salt, and pepper.
  2. Stir to combine all ingredients.
  3. Cover and cook on low for 8 hours or on high for 4 hours, until the beef is tender.
  4. About 30 minutes before serving, add the egg noodles to the crockpot.
  5. If you prefer a thicker sauce, mix cornstarch with a little cold water to create a slurry, then stir it into the crockpot during the last 30 minutes of cooking.
  6. Once the noodles are cooked, serve hot, garnished with chopped parsley.

Notes

  • You can use other cuts of beef, such as brisket or round roast.
