- 2 pounds beef chuck roast, cut into chunks
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups beef broth
- 1 cup carrots, sliced
- 1 cup celery, sliced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper, to taste
- 8 ounces egg noodles
- 2 tablespoons cornstarch (optional, for thickening)
- Chopped parsley, for garnish
Instructions
- In a crockpot, add the beef chunks, chopped onion, minced garlic, beef broth, carrots, celery, thyme, rosemary, salt, and pepper.
- Stir to combine all ingredients.
- Cover and cook on low for 8 hours or on high for 4 hours, until the beef is tender.
- About 30 minutes before serving, add the egg noodles to the crockpot.
- If you prefer a thicker sauce, mix cornstarch with a little cold water to create a slurry, then stir it into the crockpot during the last 30 minutes of cooking.
- Once the noodles are cooked, serve hot, garnished with chopped parsley.
Notes
- You can use other cuts of beef, such as brisket or round roast.
- Feel free to add other vegetables like peas or mushrooms for extra flavor.
- This dish can be made ahead of time and reheated for easy meals during the week.
