Instructions

  1. Preheat your smoker or grill to 225°F (107°C).
  2. In a bowl, combine smoked paprika, brown sugar, garlic powder, onion powder, black pepper, salt, and cayenne pepper.
  3. Rub the spice mixture all over the brisket evenly.
  4. Place the brisket in the smoker or grill and cook for about 1.5 to 2 hours per pound, or until it reaches an internal temperature of 195°F (90°C).
  5. During the last hour of cooking, brush the brisket with BBQ sauce.
  6. Once cooked, remove the brisket from the smoker and let it rest for at least 30 minutes.
  7. Slice the brisket against the grain and serve on buns with additional BBQ sauce.
