- 4 boneless chicken breasts
- 1 cup BBQ sauce
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- 2 cups mixed vegetables (bell peppers, zucchini, red onion)
- 4 cups mixed salad greens
- 1/2 cup cherry tomatoes, halved
- 1/4 cup feta cheese, crumbled (optional)
- Balsamic vinaigrette for dressing
Instructions
- Preheat the grill to medium-high heat.
- In a bowl, mix olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper. Coat the chicken breasts with this mixture.
- Grill the chicken for about 6-7 minutes on each side, or until fully cooked. Brush with BBQ sauce during the last few minutes of cooking.
- While the chicken is grilling, toss the mixed vegetables with a bit of olive oil, salt, and pepper. Grill the vegetables for about 5-7 minutes, turning occasionally until tender.
- In a large bowl, combine the salad greens, cherry tomatoes, and feta cheese. Drizzle with balsamic vinaigrette and toss to combine.
- Serve the grilled chicken alongside the vegetables and salad.
