Ingredients

  • 4 boneless chicken breasts
  • 1 cup BBQ sauce
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 2 cups mixed vegetables (bell peppers, zucchini, red onion)
  • 4 cups mixed salad greens
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup feta cheese, crumbled (optional)
  • Balsamic vinaigrette for dressing

Instructions

  1. Preheat the grill to medium-high heat.
  2. In a bowl, mix olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper. Coat the chicken breasts with this mixture.
  3. Grill the chicken for about 6-7 minutes on each side, or until fully cooked. Brush with BBQ sauce during the last few minutes of cooking.
  4. While the chicken is grilling, toss the mixed vegetables with a bit of olive oil, salt, and pepper. Grill the vegetables for about 5-7 minutes, turning occasionally until tender.
  5. In a large bowl, combine the salad greens, cherry tomatoes, and feta cheese. Drizzle with balsamic vinaigrette and toss to combine.
  6. Serve the grilled chicken alongside the vegetables and salad.
