  • 4 ripe peaches, halved and pitted
  • 2 tablespoons brown sugar
  • 1 teaspoon cinnamon
  • 2 cups vanilla ice cream
  • 1 cup raspberry sauce
  • Fresh mint leaves for garnish

Instructions

  1. Preheat the grill to medium heat.
  2. In a small bowl, mix the brown sugar and cinnamon.
  3. Brush the cut sides of the peaches with a little oil and sprinkle the brown sugar mixture evenly over them.
  4. Place the peaches cut side down on the grill and cook for about 4-5 minutes, or until grill marks appear and the peaches are tender.
  5. Remove the peaches from the grill and let them cool slightly.
  6. Serve each grilled peach half with a scoop of vanilla ice cream on top and drizzle with raspberry sauce.
  7. Garnish with fresh mint leaves before serving.
